This is a pretty quick way to make tomato soup. If you have a little more time, you can use 8 tomatoes, peeled, cored and blended smooth instead of tomato juice.

- 2 cups tomato juice
- 3 cups low fat milk (skim, 1% or 2%)
- 3 tablespoons cornstarch
- 1 teaspoon basil, minced
- - plain, unsweetened yogurt or low-fat sour cream for garnish
- - whole basil leaves, for garnish
- 1 - green onion, sliced for garnish

Step 1Place all ingredients in a dutch oven. Heat until boiling, then lower heat. Stir constantly while simmering until thickened. (If too thick, use a little water until desired consistency!)
