Family favorite- great for lunch the next day. Super easy!

Ingredients

  • 1 can(s)
    15 oz can of pumpkin puree (not pumpkin pie filling!)
  • 1 medium
    brown onion chopped
  • 1 pkg
    frozen corn, 6-8 oz.
  • 8 oz
    chicken broth
  • 2 Tbsp
    butter
  • 8 oz
    half and half
  • 3 sprig(s)
    fresh tarragon, or tsp of dried
  • pinch
    salt and pepper to taste

How To Make

  • 1
    melt butter in large pan and saute the onions until golden.
  • 2
    add chicken broth, corn and pumpkin puree, bring to a boil
  • 3
    reduce heat, add tarragon, half and half, and salt and pepper. simmer about 10 minutes. Serve.
