pumpkin soup
we all thought mom was nuts when she said she was making pumpkin soup... now some 35 yrs later and humdred of pots of soup well ya get the pic.. it still is a winner... jus a few changes.. jus made it tonight for hubby for the first time.. first thing he said was... when ya gonna make this again :)...

Ingredients
- 3/4 pound thick cut bacon
- 1 medium yellow onion
- 1/2 medium green bell pepper
- 2 small carrots
- 1 can chicken stock
- 1 - stock can 1/2&1/2
- 2 cans solid pack pumpkin
- 1 pinch seasoned salt
- several - grinds fresh ground pepper
- 1/2 teaspoon nutmeg
- 1/2 stick butter
- - sprinkle of dried chives per bowl
How To Make pumpkin soup

Step 1cut bacon into small pieces... fry til crisp... remove bacon from pan set aside add onion,pepper and carrots cook til onion is limp... add stock bring to boil over high heat... lower heat to simmer and cook bout 25 minutes.. add pumpkin blend well add seasoned salt,pepper,nutmeg and 1/2&1/2....... heat til hot but DO NOT BOIL.... jus before serving add 1/2 stick butter and stir til it melts...laddle soup into soup bowls and sprinkle chives on top... serve with whole wheat saltines
