1Cook the pumpkin in the 2 cups water, Save the water pull the cooked pumpkin . Puree 1/2 the
pumpkin add it to the water. Add the onions & simmer until onions are cooked.
Cut the pumpkin in bite size pieces. Add remaining Ingredients except roux. Temper the milk so it don't curtle.Simmer about 10 minutes
Add roux to thicken to a texture of your choice.
