This is a wonderful quick and easy soup, It has great flavor, you can add ham instead of the bacon bits, more potatoes, onion, celery to suit your taste. A Big bowl this a cool fall night YUMMY!!!!!

Ingredients

  • 4 cups potatoes, peeled and diced
  • 2 - celery stalks, diced
  • 1/3 cup finely chopped onion
  • 1/2 cup bacon bits
  • 3 1/4 cups water
  • 2 tablespoons chicken bouillon granules
  • 1 teaspoon pepper ( or to taste)
  • 5 tablespoons butter
  • 6 tablespoons all purpose flour
  • 2 cups milk

How To Make potato soup

  • Step 1
    combine the potatoes, onion, celery, bacon bits, and water in a large pot. Bring to a boil then lower heat to med. and cook until potatoes are tender, stir in chicken bouillon, and pepper
  • Step 2
    In a separate saucepan, melt butter over med,low heat.Whisk in flour using a fork stirring constantly until thick, about one minute .
  • Step 3
    slowly stir in milk as not to allow lumps to form until all of the milk has been added, continue to stir over medium-low heat until thick about 5 minutes
  • Step 4
    stir the milk mixture into the large pot and cook soup until heated through.
