This is a wonderful quick and easy soup, It has great flavor, you can add ham instead of the bacon bits, more potatoes, onion, celery to suit your taste. A Big bowl this a cool fall night YUMMY!!!!!

Ingredients

4 c
potatoes, peeled and diced
2
celery stalks, diced
1/3 c
finely chopped onion
1/2 c
bacon bits
3 1/4 c
water
2 Tbsp
chicken bouillon granules
1 tsp
pepper ( or to taste)
5 Tbsp
butter
6 Tbsp
all purpose flour
2 c
milk

How to Make Potato Soup

Step-by-Step

  • 1combine the potatoes, onion, celery, bacon bits, and water in a large pot. Bring to a boil then lower heat to med. and cook until potatoes are tender, stir in chicken bouillon, and pepper
  • 2In a separate saucepan, melt butter over med,low heat.Whisk in flour using a fork stirring constantly until thick, about one minute .
  • 3slowly stir in milk as not to allow lumps to form until all of the milk has been added, continue to stir over medium-low heat until thick about 5 minutes
  • 4stir the milk mixture into the large pot and cook soup until heated through.
