Potato Bacon Chowder
This is my definition of comfort food. It's easy and quick to prepare. Serve it with fresh bread & that's a meal for me.
8 slicebacon - chopped
1 conion - medium chop
3 cpotaoes, diced (i like ukon gold)
1 1/2 cwater
1 can(s)cream of chicken soup
1 csour cream
1 3/4 cmilk
1/2 tspblack pepper
OPTIONAL: SHREDDED CHEDDAR CHEESE & DICED TOMATOES
How to Make Potato Bacon Chowder
- 1)Fry bacon until crisp in a large heavy pot. Add onion & saute 2 - 3 minutes.
- 2) Pour off fat; Add water and potatoes. Bring to a boil; cover & simmer 10-15 minutes or until potatoes are tender.
- 3) Stir in canned soup, sour cream and milk. Add salt and pepper. Heat to serving temperature.
- 4) Serve with the optional shredded cheese and tomatoes sprinkled on top.
