Ingredients
- 3 cups chicken broth
- 1 cup onion, chopped
- 2-3 cups potatoes, russets diced
- 1 teaspoon dried dillweed
- 4 tablespoons butter
- 4 tablespoons flour
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 cups milk
- 1 1/2-2 cups ham, cubes
How To Make potato and ham soup
-
Step 1In large saucepan combine broth, onion, potatoes, and dill. Bring to a boil, reduce heat, cover and simmer til potatoes are tender. About 12 to 15 minutes.
-
Step 2Put 1/2 to all of mixture into blender/food processor. (I prefer some of the potatoes to stay chunky) Blend til smooth. Put the smooth mixture and the chunky potato mixture in a large bowl and set aside.
-
Step 3In the large saucepan melt butter and add in the flour, salt and pepper and stir for a minute. Add the milk. Cook and stir til mixture thickens and gets bubbly. Add the potato mixture and the ham and cook til heated through.
