potato and ham soup

This is a fairly easy recipe and my family LOVES it!

Ingredients

  • 3 cups chicken broth
  • 1 cup onion, chopped
  • 2-3 cups potatoes, russets diced
  • 1 teaspoon dried dillweed
  • 4 tablespoons butter
  • 4 tablespoons flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cups milk
  • 1 1/2-2 cups ham, cubes

How To Make potato and ham soup

  • Step 1
    In large saucepan combine broth, onion, potatoes, and dill. Bring to a boil, reduce heat, cover and simmer til potatoes are tender. About 12 to 15 minutes.
  • Step 2
    Put 1/2 to all of mixture into blender/food processor. (I prefer some of the potatoes to stay chunky) Blend til smooth. Put the smooth mixture and the chunky potato mixture in a large bowl and set aside.
  • Step 3
    In the large saucepan melt butter and add in the flour, salt and pepper and stir for a minute. Add the milk. Cook and stir til mixture thickens and gets bubbly. Add the potato mixture and the ham and cook til heated through.
