potato and ham soup (from leftover boiled dinner)
I make this soup with left overs from boiled ham dinner. Sometimes I make the dinner just to have this soup...prep time is time making boiled diner

Ingredients
- 2 slices bacon (chopped)
- 1 - onion (chopped)
- 2 tablespoons butter
- 1/4 cup flour
- 1/2 teaspoon rosemary, dried
- 1 teaspoon dill, dried
- - salt and pepper
- 5 - cooked potatoes
- 1 cup cooked carrots, diced
- 1 cup cooked parsnips, diced
- 8 cups chicken broth
- 1 cup - cooked diced ham
- 1/2 cup cream or milk
- 1/2 cup shredded chedder cheese (for garnish)

Step 1render bacon on large pot and add onion and cook till onion is almost carmelized, add butter and flour and cook til golden in color

Step 2add spices

Step 3add Chicken stock, potatoes, carrots and parsnips. mash or use emersion blender to break down veggies

Step 4cook to a boil and then add cooked ham cook 5 min to heat though

Step 5remove from heat and stir in cream.

Step 6serve and top with 1 to 2 Tbls. cheese

Step 7serve with chedder biscut...yummy
