polish kielbasa and cabbage soup
We made this soup last night. I had some fresh cabbage from our CSA. It was very tasty. My husband loved kielbasa, no matter how it's fixed. Throw a little hot sauce in, yummy.

Ingredients
- 1 pound polish kielbasa, sliced in 1/4 in rounds
- 2 cups onions, sliced thinly
- 4 cups green cabbage, shredded
- 1 tablespoon fresh garlic, minced
- 6 cups vegetable stock
- 2 cups potatoes, peeled and diced
- 1 teaspoon salt
- 1/2 teaspoon pepper

Don't have vegetable stock handy? Combine vegetable bouillon with water to make your own veggie broth. A 10 oz bag of coleslaw mix without carrots equals 4 cups of shredded cabbage.

Step 1Saute kielbasa in a large soup pot over medium heat for 5 minutes. Remove the kielbasa and set aside.

Step 2Add onion to the same pot.

Step 3Then add the cabbage and saute for 10 minutes, stirring occasionally.

Step 4Add garlic and saute for 2 minutes, stirring constantly.

Step 8Bring to a boil and simmer for 20 minutes.
