We made this soup last night. I had some fresh cabbage from our CSA. It was very tasty. My husband loved kielbasa, no matter how it's fixed. Throw a little hot sauce in, yummy.

Ingredients

  • 1 pound polish kielbasa, sliced in 1/4 in rounds
  • 2 cups onions, sliced thinly
  • 4 cups green cabbage, shredded
  • 1 tablespoon fresh garlic, minced
  • 6 cups vegetable stock
  • 2 cups potatoes, peeled and diced
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Don't have vegetable stock handy? Combine vegetable bouillon with water to make your own veggie broth. A 10 oz bag of coleslaw mix without carrots equals 4 cups of shredded cabbage.
  • Saute sliced kielbasa.
    Step 1
    Saute kielbasa in a large soup pot over medium heat for 5 minutes. Remove the kielbasa and set aside.
  • Add onion to a pot and saute.
