When we had left over baked potatoes in the restaurants, we would use them for this at times.

Ingredients
- 4 large baked potatoes
- 2/3 cup melted butter,
- - salt & pepper
- 2/3 cup flour.
- 6 cups milk
- 4 - green onions, chopped fine
- 10 slices bacon, cooked & crumbled
- 2 cloves garlic, minced
- 1 1/2 cups shredded cheese
- 8 ounces sour cream
How To Make peggi's baked potato soup

Step 1SCOOP OUT INSIDES OF BAKED POTATOES. SET ASIDE.

Step 2COOK UNTIL SMOOTH (ABOUT 1 MINUTE), MELTED BUTTER, SALT & PEPPER, FLOUR.

Step 3ADD MILK.

Step 4COOK BACON, ALONG WITH GARLIC IN SKILLET.

Step 5TO THE BUTTER MIXTURE, STIR IN: THE POTATO INNARDS, GREEN ONIONS, BACON MIXTURE, & SHREDDED CHEESE.

Step 6COOK ON MEDIUM HEAT UNTIL FLAVORS ARE MARRIED TOGETHER, ABOUT 10-15 MINUTES.

Step 7ADD SOUR CREAM LAST & REMOVE FROM HEAT.
