Ingredients

  • 3 oz
    pepperoni slices
  • 1 Tbsp
    olive oil
  • 1 can(s)
    28oz crushed tomato
  • 1 can(s)
    15 oz cannellini beans
  • 2 Tbsp
    italian seasoning
  • 2 oz
    red or white wine
  • 2 c
    ditalini pasta
  • 1 pinch
    grated cheese

How to Make Pasta Fagioli

Step-by-Step

  1. On stovetop, In 6 qt. pot, add 1 tbsp oil and heat for 10 seconds. Add pepperoni and saute for a minute.
  2. Drain off excess oil. To pot,add canned tomatoes, beans and red ( or white wine) and Italian seasoning. Stir.
  3. Simmer on low heat for 2 1/2 hours, stirring occasionally, adding water or more wine if consistency is too thick.
  4. Boil Pasta until al dente.
  5. To serve, use individual bowls, add a scoop of pasta, and cover with the sauce mixture. Add grated cheese, if desired.
