Ingredients
- 1 head cauliflower broken into florets
- olive oil cooking spray
- 1/4 cup olive oil
- 1 large onion
- 4 cloves garlic
- 4 cups waer
- 1 chicken bouillon cube
- salt & pepper to taste
How To Make oven roasted cauliflower soup

Step 1Place the cauliflower florets into a rage bowl of lightly salted water; allow to stand for 2 minutes. Drain well & arrange on a sheet of wavy aluminum foil lined baking sheet. Spray the olive oil cooking spray evenly the cauliflower

Step 2Preheat oven broiler & set the oven rack about 6 inches from the heat

Step 3Broil the cauliflower until browned - about 20-30 minutes

Step 4Heat the olive oil in a large soup pot, cook the onion until translucent-abut 5 minutes, stir in the garlic and roasted cauliflower. Poor in the water. Season with salt & pepper and simmer until all the vegetables are tender- about 30 minutes.

Step 5Blend the soup in the pot with an immersion hand blender until cream & smooth.
