Ingredients

  • 1 head cauliflower broken into florets
  • olive oil cooking spray
  • 1/4 cup olive oil
  • 1 large onion
  • 4 cloves garlic
  • 4 cups waer
  • 1 chicken bouillon cube
  • salt & pepper to taste

How To Make oven roasted cauliflower soup

  • Step 1
    Place the cauliflower florets into a rage bowl of lightly salted water; allow to stand for 2 minutes. Drain well & arrange on a sheet of wavy aluminum foil lined baking sheet. Spray the olive oil cooking spray evenly the cauliflower
  • Step 2
    Preheat oven broiler & set the oven rack about 6 inches from the heat
  • Step 3
    Broil the cauliflower until browned - about 20-30 minutes
  • Step 4
    Heat the olive oil in a large soup pot, cook the onion until translucent-abut 5 minutes, stir in the garlic and roasted cauliflower. Poor in the water. Season with salt & pepper and simmer until all the vegetables are tender- about 30 minutes.
  • Step 5
    Blend the soup in the pot with an immersion hand blender until cream & smooth.
