Ingredients For oven roasted cauliflower soup

1head cauliflower broken into florets

olive oil cooking spray

1/4 colive oil

1large onion
-
4 clovegarlic
-
4 cwaer
-
1chicken bouillon cube

salt & pepper to taste
How To Make oven roasted cauliflower soup

1Place the cauliflower florets into a rage bowl of lightly salted water; allow to stand for 2 minutes. Drain well & arrange on a sheet of wavy aluminum foil lined baking sheet. Spray the olive oil cooking spray evenly the cauliflower

2Preheat oven broiler & set the oven rack about 6 inches from the heat

3Broil the cauliflower until browned - about 20-30 minutes

4Heat the olive oil in a large soup pot, cook the onion until translucent-abut 5 minutes, stir in the garlic and roasted cauliflower. Poor in the water. Season with salt & pepper and simmer until all the vegetables are tender- about 30 minutes.

5Blend the soup in the pot with an immersion hand blender until cream & smooth.
