Onion Soup with Tuscan Garlic Bread

A nice warm comfort soup.

1/3 cup butter
3 cups onion, sliced
2 t. flour
salt and black pepper
2 quarts vegetable broth
toasted bread cubes or tuscan garlic bread, recipe follows
grated parmigiano reggiano


1in large pot, heat butter over low heat and add onions. Cover and allow to cook for about 30 minutes on low. Next add flour, salt and pepper and mix to dissolve the flour. Add broth slowly , stirring continuously and cook for about 15 minutes. In meantime, cut slices of bread into cubes and toast. In each serving bowl, put the toasted bread then pour the soup over the top. Sprinkle with Parmigiano Reggiano and serve hot. Serves 4
Tuscan Garlic Bread
8 slices Tuscan bread, or hearty country bread
Extra virgin olive oil, as needed
1 clove garlic
Salt and pepper to taste
Toast bread slices on grill until golden. Rub each slice with garlic land drizzle olive oil over each one. Sprinkle with salt and pepper to taste and serve hot. Serves 4
