This is a soup my mom used to make with leftover vegetables and whatever with water and salt. This is my interpretation.

Ingredients

  • 2 bunches Swiss chard, tough base cut off, leafy greens sliced
  • 1 medium onion, chopped
  • 2 stalks celery, chopped
  • 4 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • 2 tablespoons olive oil
  • salt
  • 1/2 teaspoon red pepper flakes
  • 1 tablespoon tomato paste
  • 8 cups water
  • 1 teaspoon red wine vinegar
  • 6 large eggs
  • 4 slices sourdough bread, cut into cubes
  • 4 tablespoons duck fat or butter
  • freshly grated Parmesan for topping
  • salt and pepper

How To Make old-fashioned water soup

  • Step 1
    Place the onion, celery, parsley, basil, and garlic in a food processor. Process to a paste.
  • Step 2
    Add the olive oil to a Dutch Oven. Add the veggie paste and some salt.
  • Step 3
    Cook for about 10 minutes until the veggies are dry. Add the red pepper flakes and tomato paste and cook another 5 minutes.
  • Step 4
    Add the 8 cups of water and the Swiss Chard. Add more salt and pepper and bring to a boil. Reduce to a simmer. Cover and simmer 40 minutes covered partially. While the soup is simmering make the croutons. Melt the duck fat or butter in a frying pan. Add the cubes of bread and stir and brown on all side. Remove to a paper towel to drain
  • Step 5
    After the soup has simmered for 30 minutes, bring a large pot of water to a boil and add some vinegar once the water is simmering. Add the eggs to poach them.
  • Step 6
    Carefully remove the eggs and set aside.
  • Step 7
    Stir the red wine vinegar into the soup. Place some bread cubes in the bottom of 6 bowls.
  • Step 8
    Place some Swiss Chard on top, then one poached egg.
  • Step 9
    Ladle in the broth and top with cheese.
