old fashioned cream of tomato soup

This is a family favorite! Give me a bowl of this and a grilled cheese and I'm in heaven!

Ingredients

  • 1 can (29 ounce) diced tomatoes (fresh diced tomatoes may also be used)
  • 1 can (10 ounce) chicken broth
  • 2 tablespoons butter
  • 2 tablespoons sugar
  • 2 tablespoons finely minced onion
  • 1/4 teaspoon baking soda
  • 2 cups cream

How To Make old fashioned cream of tomato soup

  • Step 1
    In a heavy bottomed stock pot over medium heat cook the onions in the butter until onions are translucent.
  • Step 2
    Add tomatoes, chicken broth, sugar, and baking soda. Simmer on medium heat, 20 minutes or so, to reduce a little.
  • Step 3
    Meanwhile, slowly heat the cream, being careful not to scorch the bottom. Do not boil. (I usually heat it in the microwave)
  • Step 4
    When the cream is hot and beginning to steam, add it to the tomato mixture.
  • Step 5
    Cook on med-low, stirring often, until heated through (about 20 minutes).
