8 cbroth (i use vegetarian chicken broth)
1 stalk(s)celery, finely diced
1carrot, finely diced
smallpiece of onion, minced
4-5mushrooms, small diced
6 ozfine egg noodles
·salt and pepper to taste
How to Make Noodle Soup
- In a heavy bottom, 3 quart pot, saute celery, carrot, onion and mushrooms in the oil over med-hi heat for about 3-4 minutes.
- Add broth and bring up to a boil.
- Add noodles, reduce heat to med and gently boil until noodles are done (about 6 minutes or so, check package for directions) Add salt and pepper if desired and serve.
