This is my vegetarian version of chicken noodle soup. (The mushroom pieces take the place of the chicken.) It is quick and easy to make, yet very comforting.

Ingredients

  • 8 cups broth (i use vegetarian chicken broth)
  • 1 stalk celery, finely diced
  • 1 - carrot, finely diced
  • small piece of onion, minced
  • 4-5 - mushrooms, small diced
  • 2 tablespoons oil
  • 6 ounces fine egg noodles
  • - salt and pepper to taste

How To Make noodle soup

  • Step 1
    In a heavy bottom, 3 quart pot, saute celery, carrot, onion and mushrooms in the oil over med-hi heat for about 3-4 minutes.
  • Step 2
    Add broth and bring up to a boil.
  • Step 3
    Add noodles, reduce heat to med and gently boil until noodles are done (about 6 minutes or so, check package for directions) Add salt and pepper if desired and serve.
