Ingredients

  • 2 tablespoons olive oil, extra virgin
  • 1 medium carrot,diced
  • 1 medium onion,diced
  • 2stalks celery, diced
  • 1 cup cherry tomatoes halved
  • 1 yellow squash cut crosswise and sliced
  • 1 zucchini cut crosswise and sliced
  • 8 cups water
  • 2 chicken bouillon cubes
  • 16 ounces cauliflower riced
  • grated pecorino romano cheese for sprinkling

How To Make nonnas squash soup cauliflower rice

  • Step 1
    Put a large stock pot over medium flame heat the oil.
  • Step 2
    Add the carrots onions and celery and cook until the onion is translucent and the vegetables soft about 5 to 7 minutes
  • Step 3
    Add tomatoes to the pot and cook until softened about 3 to 5 minutes
  • Step 4
    Add the water and the bouillon cubes and where is your heat to high bring to a boil and add in the squash and zucchini cook for five minutes and add in the cauliflower cook until the squash and zucchini or tender about another five minutes
