Ingredients

  • 2 cups water
  • 1 medium cauliflower, cut into florets
  • 1/2 cup celery, chopped
  • 1/4 cup onion, chopped
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons flour
  • 2 tablespoons melted butter
  • 2 1/2 cups vegetable or chicken broth
  • 3/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/2 cup heavy cream

How To Make nice and creamy cauliflower soup

  • Step 1
    In a stock pot, bring water to a boil and add cauliflower, celery, onion and lemon juice - return to a boil.
  • Step 2
    Cover and cook for approx. 10 minutes or until veggies are tender.
  • Step 3
    In a large sauce pan, combine butter and flour until well combined. Slowly add the 2 1/2 cups broth. Cover again and simmer until broth is hot, but not boiling.
  • Step 4
    Uncover and add veggie mixture along with s & p - simmer until bubbly. Add cream and cook until heated through - do not boil. Serve topped with grated cheese.
