Ingredients
- 2 cups water
- 1 medium cauliflower, cut into florets
- 1/2 cup celery, chopped
- 1/4 cup onion, chopped
- 1 tablespoon fresh lemon juice
- 2 tablespoons flour
- 2 tablespoons melted butter
- 2 1/2 cups vegetable or chicken broth
- 3/4 teaspoon salt
- 1/8 teaspoon pepper
- 1/2 cup heavy cream
How To Make nice and creamy cauliflower soup

Step 1In a stock pot, bring water to a boil and add cauliflower, celery, onion and lemon juice - return to a boil.

Step 2Cover and cook for approx. 10 minutes or until veggies are tender.

Step 3In a large sauce pan, combine butter and flour until well combined. Slowly add the 2 1/2 cups broth. Cover again and simmer until broth is hot, but not boiling.

Step 4Uncover and add veggie mixture along with s & p - simmer until bubbly. Add cream and cook until heated through - do not boil. Serve topped with grated cheese.
