my beef veggie soup!

It`s been a rainy chilly day here in Lexington,so all day today i was thinking of my veggie soup and how much i was craving it, so here ya go,i made some when i got home from work, nothing special just your basic vegetable soup!

Ingredients

  • 3 sticks big dice celery with the leaves.
  • 1 package of fresh carrots,big diced
  • 1 package frozen lima beans
  • 1 package frozen green beans
  • 1 large diced onion
  • 2 - fresh ears of corn from the cob
  • 1 small bag of frozen peas
  • 1 small head of chopped cabbage
  • 2 cans stewed tomatoes
  • 2 - bay leaves
  • 5 - peppercorns, whole black
  • 3 cloves smashed fresh garlic
  • 1/2 jar better than bouillon beef base
  • - salt to taste

How To Make my beef veggie soup!

  • Step 1
    Add water to stock pot, add beef base,seasonings,frozen veggies, the stewed toms squeezed with your hands and juice,cook for about an hour til the Lima beans are almost tender, i add the cabbage last and cook for another hr, u may have to tweak to your own taste,lots of us have made veg soup before this is just my version,and it`s warming and yummy, and by the way lowfat!
