Ingredients
- 8 ounces mushrooms chopped
- 1 tablespoon olive oil
- 2 cloves garlic minced
- 6 green onions white and green parts separated
- 6 cups chicken stock
- 4 tablespoons dry sherry
- 1 cup rice noodles cooked according to package directions
How To Make mushroom and sherry noodle soup

Step 1Add the oil to a large pot. Saute the white parts of the green onions, garlic and mushrooms. Cook 5 minutes.

Step 2Add the chicken stock and sherry and bring to a boil. Reduce to a simmer and simmer 5 minutes. Add the noodles. Cook 1 more minute. Serve garnished with the green parts of the green onions
