My husband's mother makes the BEST potato soup! Every time she makes it for us, I eat it until I hurt!

2-1/2 lb
white potatoes
1/2 stick
medium onion, chopped
stalks of green onions
1/2 tsp
black pepper
2 c
chicken broth
1-1/2 to 2 c
half & half
1/2 tsp
garlic, minced
bacon bits
cheddar cheese, grated
salt, to taste

How to Make Mom's Potato Soup


  • 1Peel, cube and boil potatoes. Drain potatoes and return to pot.
  • 2Saute onion and garlic in butter until soft. Add onions and garlic to potatoes.
  • 3Bring to boil over medium high heat. Add chicken broth. Mash/blend until slightly lumpy.
  • 4Gradually add half & half while on low heat. Stir often for about 30 minutes. Add salt to taste.
  • 5Garnish with green onions, cheese, pepper and bacon bits.
