My husband's mother makes the BEST potato soup! Every time she makes it for us, I eat it until I hurt!

  • 2-1/2 lb
    white potatoes
  • 1/2 stick
  • 1/2
    medium onion, chopped
  • 3
    stalks of green onions
  • 1/2 tsp
    black pepper
  • 2 c
    chicken broth
  • 1-1/2 to 2 c
    half & half
  • 1/2 tsp
    garlic, minced
  • ·
    bacon bits
  • ·
    cheddar cheese, grated
  • ·
    salt, to taste

How to Make Mom's Potato Soup


  1. Peel, cube and boil potatoes. Drain potatoes and return to pot.
  2. Saute onion and garlic in butter until soft. Add onions and garlic to potatoes.
  3. Bring to boil over medium high heat. Add chicken broth. Mash/blend until slightly lumpy.
  4. Gradually add half & half while on low heat. Stir often for about 30 minutes. Add salt to taste.
  5. Garnish with green onions, cheese, pepper and bacon bits.
