Ingredients
- 2-1/2 pound white potatoes
- 1/2 stick butter
- 1/2 - medium onion, chopped
- 3 - stalks of green onions
- 1/2 teaspoon black pepper
- 2 cups chicken broth
- 1-1/2 to 2 cups half & half
- 1/2 teaspoon garlic, minced
- - bacon bits
- - cheddar cheese, grated
- - salt, to taste
How To Make mom's potato soup

Step 1Peel, cube and boil potatoes. Drain potatoes and return to pot.

Step 2Saute onion and garlic in butter until soft. Add onions and garlic to potatoes.

Step 3Bring to boil over medium high heat. Add chicken broth. Mash/blend until slightly lumpy.

Step 4Gradually add half & half while on low heat. Stir often for about 30 minutes. Add salt to taste.

Step 5Garnish with green onions, cheese, pepper and bacon bits.
