Mom and I make this in the fall...It is so good..with a grilled open face cheese and onion sandwich....we have been making it for years...It has a wonderful flavor...If you like Asparagus you will like this.....

Ingredients

  • 1 1/2 c
    chicken broth
  • 1/2 c
    onion, chopped
  • 2 c
    asparagus, cut up
  • 1 tsp
    lemon juice
  • 1/8 tsp
    mace, ground
  • 1 pinch
    nutmeg
  • 2 Tbsp
    butter, melted
  • 2 Tbsp
    flour
  • ·
    salt and pepper to taste
  • 1 c
    milk

How to Make Mom's Asparagus Soup

Step-by-Step

  1. Bring to boil and cook for 15 to 20 minutes on low or medium heat...Put into blender and cream...
  2. Melt 2 tbsp butter, add 2 tbsp of flour, salt and pepper to taste. Mix in 1 Cup of milk and stir constantly until thickened. Add to Asparagus mixture...Heat and Enjoy......
