mom's asparagus soup

Mom and I make this in the fall...It is so good..with a grilled open face cheese and onion sandwich....we have been making it for years...It has a wonderful flavor...If you like Asparagus you will like this.....

Ingredients

  • 1 1/2 cups chicken broth
  • 1/2 cup onion, chopped
  • 2 cups asparagus, cut up
  • 1 teaspoon lemon juice
  • 1/8 teaspoon mace, ground
  • 1 pinch nutmeg
  • 2 tablespoons butter, melted
  • 2 tablespoons flour
  • - salt and pepper to taste
  • 1 cup milk

How To Make mom's asparagus soup

  • Step 1
    Bring to boil and cook for 15 to 20 minutes on low or medium heat...Put into blender and cream...
  • Step 2
    Melt 2 tbsp butter, add 2 tbsp of flour, salt and pepper to taste. Mix in 1 Cup of milk and stir constantly until thickened. Add to Asparagus mixture...Heat and Enjoy......
