This recipe was given to me by my husbands MS aunt who is one of the best cooks EVER. I have added some of my own tweaks to my own liking.

heads of broccoli, steamed
4 can(s)
cream of broccoli or cream of mushroom soup
1 can(s)
chicken broth
2 can(s)
1 c
half and half
tony chacheres creole seasoning to taste (optional)
2 Tbsp
chopped fresh chives
2-3 Tbsp
1 tsp
1 c
uncooked white rice
3 c
cheddar cheese. more or less to liking

How to Make Mississippi Broccoli Cheddar Soup


  • 1Break up part of broccoli into small chunks and take the other half and puree into smoothie consistency.
  • 2Mix broccoli and broccoli puree with other ingredients in a large pot, except cheese. Bring to a boil and let simmer on low until rice is tender. Add cheddar while soup is hot.
  • 3Serve with texas toast or any kind of garlic bread. Also very good garnished with croutons.
