mississippi broccoli cheddar soup

This recipe was given to me by my husbands MS aunt who is one of the best cooks EVER. I have added some of my own tweaks to my own liking.

Ingredients

  • 1-2 - heads of broccoli, steamed
  • 4 cans cream of broccoli or cream of mushroom soup
  • 1 can chicken broth
  • 2 cans water
  • 1 cup half and half
  • - tony chacheres creole seasoning to taste (optional)
  • 2 tablespoons chopped fresh chives
  • 2-3 tablespoons butter
  • 1 teaspoon curry
  • 1 cup uncooked white rice
  • 3 cups cheddar cheese. more or less to liking

How To Make mississippi broccoli cheddar soup

  • Step 1
    Break up part of broccoli into small chunks and take the other half and puree into smoothie consistency.
  • Step 2
    Mix broccoli and broccoli puree with other ingredients in a large pot, except cheese. Bring to a boil and let simmer on low until rice is tender. Add cheddar while soup is hot.
  • Step 3
    Serve with texas toast or any kind of garlic bread. Also very good garnished with croutons.
