This recipe was given to me by my husbands MS aunt who is one of the best cooks EVER. I have added some of my own tweaks to my own liking.

Ingredients
- 1-2 - heads of broccoli, steamed
- 4 cans cream of broccoli or cream of mushroom soup
- 1 can chicken broth
- 2 cans water
- 1 cup half and half
- - tony chacheres creole seasoning to taste (optional)
- 2 tablespoons chopped fresh chives
- 2-3 tablespoons butter
- 1 teaspoon curry
- 1 cup uncooked white rice
- 3 cups cheddar cheese. more or less to liking
How To Make mississippi broccoli cheddar soup

Step 1Break up part of broccoli into small chunks and take the other half and puree into smoothie consistency.

Step 2Mix broccoli and broccoli puree with other ingredients in a large pot, except cheese. Bring to a boil and let simmer on low until rice is tender. Add cheddar while soup is hot.

Step 3Serve with texas toast or any kind of garlic bread. Also very good garnished with croutons.
