My father was a wonderful cook and I cherish all the time we spent together in the kitchen. He made several homemade soups and this is one of my favorites.

Ingredients

  • 2 slice
    bacon, diced
  • 2 clove
    garlic, minced
  • 1 large
    onion, chopped
  • 4 qt
    chicken broth
  • 2 c
    spaghetti, broken into pieces
  • 2
    potatoes, diced
  • 4
    carrots, sliced
  • 2 c
    cabbage, sliced
  • 1/2 c
    celery, diced
  • 1 can(s)
    tomato sauce
  • 1 can(s)
    kidney beans, drained
  • 1 can(s)
    chic pea, drained
  • 2 tsp
    salt
  • 1/2 tsp
    pepper
  • 1 Tbsp
    parsley, chopped
  • 1/2 c
    grated cheese

How to Make Minestrone Soup

Step-by-Step

  1. Cook bacon in soup pot, add garlic and onion and cook until tender. Add broth, pasta, potatoes, carrots, cabbage, celery, and tomato sauce. Bring to a boil and simmer 15-20 minutes, or until vegetables are just cooked. Add kidney beans, chic peas, seasonings and parsley. Cook 5 minutes longer. Add cheese, stir and serve.
