My father was a wonderful cook and I cherish all the time we spent together in the kitchen. He made several homemade soups and this is one of my favorites.

Ingredients

  • 2 slices bacon, diced
  • 2 cloves garlic, minced
  • 1 large onion, chopped
  • 4 quarts chicken broth
  • 2 cups spaghetti, broken into pieces
  • 2 - potatoes, diced
  • 4 - carrots, sliced
  • 2 cups cabbage, sliced
  • 1/2 cup celery, diced
  • 1 can tomato sauce
  • 1 can kidney beans, drained
  • 1 can chic pea, drained
  • 2 teaspoons salt
  • 1/2 teaspoon pepper
  • 1 tablespoon parsley, chopped
  • 1/2 cup grated cheese

How To Make minestrone soup

  • Step 1
    Cook bacon in soup pot, add garlic and onion and cook until tender. Add broth, pasta, potatoes, carrots, cabbage, celery, and tomato sauce. Bring to a boil and simmer 15-20 minutes, or until vegetables are just cooked. Add kidney beans, chic peas, seasonings and parsley. Cook 5 minutes longer. Add cheese, stir and serve.
