Ingredients
- 2 slices bacon, diced
- 2 cloves garlic, minced
- 1 large onion, chopped
- 4 quarts chicken broth
- 2 cups spaghetti, broken into pieces
- 2 - potatoes, diced
- 4 - carrots, sliced
- 2 cups cabbage, sliced
- 1/2 cup celery, diced
- 1 can tomato sauce
- 1 can kidney beans, drained
- 1 can chic pea, drained
- 2 teaspoons salt
- 1/2 teaspoon pepper
- 1 tablespoon parsley, chopped
- 1/2 cup grated cheese
How To Make minestrone soup

Step 1Cook bacon in soup pot, add garlic and onion and cook until tender. Add broth, pasta, potatoes, carrots, cabbage, celery, and tomato sauce. Bring to a boil and simmer 15-20 minutes, or until vegetables are just cooked. Add kidney beans, chic peas, seasonings and parsley. Cook 5 minutes longer. Add cheese, stir and serve.
