Minestrone alla Milanese ~ Slow Cooker

Ingredients

2 can(s)(14 1/2 oz) each of reduced-sodium beef broths

1 can(s)(14 1/2 oz) diced tomatoes, undrained

1 cdiced potato
-
1 ccoarsely chopped green cabbage
-
1 ccoarsely chopped carrots
-
1 csliced zucchini
-
1/4 cchopped onion
-
3/4 csliced fresh green beans
-
1/4 ccoarsely chopped celery
-
1/4 cwater
-
2 Tbspolive oil
-
1 clovegarlic, minced
-
1/2 tspdried basil leaves
-
1/4 tspdried rosemary
-
1bay leaf
-
1 can(s)(15 1/2 oz) cannelini beans, rinsed and drained
-
·grated parmesan cheese (optional)
How to Make Minestrone alla Milanese ~ Slow Cooker
- Combine all ingredients except cannelini beans and cheese in slow cooker, mix well.
- Cover and cook on LOW 5-6 hours
Add cannelini beans. Cover and cook on LOW 1 hour or until vegetables are crisp tender.
Remove and discard bay leaf.
Garnish with cheese, if desired.
