This is a Polish recipe from Mark's family, original title: Kapusniak ze swiezeh kapusty. To me, it is a warm, wonderful soup that I am glad he shared with me!

Ingredients For mark's cabbage soup

  • 1 lb
    cabbage, finely sliced
  • 3 c
    beef broth
  • 1 lg
    white onion, sliced
  • 3 c
    cold water
  • 2 md
    tomatoes, cubed
  • 1 Tbsp
    flour
  • 2 Tbsp
    butter, softened
  • 1/2 tsp
    sugar
  • salt and pepper

How To Make mark's cabbage soup

  • 1
    Place the cabbage and the onions in a kettle with cold water. Bring to a boil and cook a few minutes uncovered. Reduce heat and cover. Simmer for 10 mnutes. Add the tomatoes, simmer another 10 minutes. Bring the broth to a boil. Mix the butter with the flour. Add 4 tablespoons hot broth, one by one, mixing. Add to the broth, bring to a boil. Add the broth to the cabbage. Season with sugar, salt and pepper.

    Notes: While beef broth works well, if you can find oxtail broth it's even better.
