My family and friends have all loved this recipe. I have made it many times and it always comes out great. You will not be disappointed. It is easy and quick to make.. Enjoy..

Ingredients
- 2 1/4 tablespoons olive oil, extra virgin
- 1 medium onion chopped
- 1/4 - green pepper chopped
- 1/4 - sweet red pepper diced
- 1/4 - sweet yellow pepper diced
- 1/4 - sweet orange pepper diced
- 2 cloves minced garlic cloves
- 1 tablespoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon red peper flakes
- few pinch dried parsley flakes
- 1/2 cup uncooked minute rice/or reg.
- 1 can 14 oz. petite cut tomatos. any flavor
- 6 cups chicken broth
- 1/2 cup of wine. optional..
- 4 ounces mini pepperoni
- - provolone cheese slices
- - fresh parmesan cheese

Step 1In a heavy pan heat olive oil

Step 2Saute' onion and pepper until soft and garlic

Step 3Add oregano,basil,crushed red pepper, parsley,rice, tomatoes and juice, broth,wine if using it..

Step 4Bring to a boil, lower heat and simmer covered for 20 min. or until rice is cooked.

Step 5Stir in pepperoni and heat though

Step 6Place in a bowl sprinkle with fresh Parmesan Cheese and place a slice of provolone on the top.. Let it melt in..

Step 7U can use reg pepperoni, and shredded cheese. You can put it in the pot to heat and melt I do the slices for less mess. The small pepperoni is nice for bit size.. Experiment.. Enjoy you will love this soup.
