marie's tomato soup italian style

My family and friends have all loved this recipe. I have made it many times and it always comes out great. You will not be disappointed. It is easy and quick to make.. Enjoy..

Ingredients

  • 2 1/4 tablespoons olive oil, extra virgin
  • 1 medium onion chopped
  • 1/4 - green pepper chopped
  • 1/4 - sweet red pepper diced
  • 1/4 - sweet yellow pepper diced
  • 1/4 - sweet orange pepper diced
  • 2 cloves minced garlic cloves
  • 1 tablespoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red peper flakes
  • few pinch dried parsley flakes
  • 1/2 cup uncooked minute rice/or reg.
  • 1 can 14 oz. petite cut tomatos. any flavor
  • 6 cups chicken broth
  • 1/2 cup of wine. optional..
  • 4 ounces mini pepperoni
  • - provolone cheese slices
  • - fresh parmesan cheese

How To Make marie's tomato soup italian style

  • Step 1
    In a heavy pan heat olive oil
  • Step 2
    Saute' onion and pepper until soft and garlic
  • Step 3
    Add oregano,basil,crushed red pepper, parsley,rice, tomatoes and juice, broth,wine if using it..
  • Step 4
    Bring to a boil, lower heat and simmer covered for 20 min. or until rice is cooked.
  • Step 5
    Stir in pepperoni and heat though
  • Step 6
    Place in a bowl sprinkle with fresh Parmesan Cheese and place a slice of provolone on the top.. Let it melt in..
  • Step 7
    U can use reg pepperoni, and shredded cheese. You can put it in the pot to heat and melt I do the slices for less mess. The small pepperoni is nice for bit size.. Experiment.. Enjoy you will love this soup.
