I love loaded baked potatoes and I love soup. I made this up as I went along and it became an absolute favorite in fall and winter.

Add to Grocery List

10 large
red potatoes
3 Tbsp
bacon drippings
hard boiled eggs
cooked bacon pieces
4 Tbsp
cheese, shredded
sour cream
garlic and herb seasoning
salt and pepper

How to Make Loaded potato soup


  • 1chop potatoes into bite size pieces and add potatoes to enough water to generously cover them.
  • 2Add bacon drippings.
  • 3Boil until potatoes are tender.
  • 4Mix flour with one cup of water and slowly pour into boiling potato and stir until thickened.
  • 5Add bacon pieces.
  • 6Cut up peeled boiled eggs into slices and add to soup.
  • 7Garnish with sour cream and your choice of cheese if desired.
