I love loaded baked potatoes and I love soup. I made this up as I went along and it became an absolute favorite in fall and winter.

  • 10 large
    red potatoes
  • 3 Tbsp
    bacon drippings
  • 4
    hard boiled eggs
  • ·
    cooked bacon pieces
  • 4 Tbsp
  • ·
    cheese, shredded
  • ·
    sour cream
  • ·
    garlic and herb seasoning
  • ·
    salt and pepper

How to Make Loaded potato soup


  1. chop potatoes into bite size pieces and add potatoes to enough water to generously cover them.
  2. Add bacon drippings.
  3. Boil until potatoes are tender.
  4. Mix flour with one cup of water and slowly pour into boiling potato and stir until thickened.
  5. Add bacon pieces.
  6. Cut up peeled boiled eggs into slices and add to soup.
  7. Garnish with sour cream and your choice of cheese if desired.
