Ingredients
- 2 tablespoons oil
- 1 large onion, chopped
- 2 - leeks, sliced
- 3 - stalks celery, chopped
- 1 - garlic clove, crushed
- 4 - medium carrots, sliced
- 1 cup cabbage, shredded
- 2 - medium potatoes, diced
- 1 teaspoon fresh thyme
- 1 teaspoon fresh rosemary
- 2 tablespoons fresh parsley
- 2.5 cups vegetable stock
- 16 ounces tomatoes
- - salt and pepper to taste
How To Make linda's vegetable soup

Step 1Heat the oil in a large saucepan and saute the onion, leeks, celery, and garlic for 5 minutes.

Step 2Add the carrots, cabbage and potatoes and stir well.

Step 3Add the herbs.

Step 4Cover with vegetable stock and simmer, with the lid on, for about 1 hour.

Step 5Stir occasionally, and add more liquid if necessary.

Step 6If you\'re using fresh tomatoes, sit them on top of the veggies for a minute or two, until their skins peel away easily.

Step 7Then stir the skinned tomatoes into the soup.

Step 8If using canned, add to the soup and stir well.

Step 9Season with salt and pepper and serve.
