Ingredients

  • 2 Tbsp
    oil
  • 1 large
    onion, chopped
  • 2
    leeks, sliced
  • 3
    stalks celery, chopped
  • 1
    garlic clove, crushed
  • 4
    medium carrots, sliced
  • 1 c
    cabbage, shredded
  • 2
    medium potatoes, diced
  • 1 tsp
    fresh thyme
  • 1 tsp
    fresh rosemary
  • 2 Tbsp
    fresh parsley
  • 2.5 c
    vegetable stock
  • 16 oz
    tomatoes
  • ·
    salt and pepper to taste

How to Make Linda's Vegetable Soup

Step-by-Step

  1. Heat the oil in a large saucepan and saute the onion, leeks, celery, and garlic for 5 minutes.
  2. Add the carrots, cabbage and potatoes and stir well.
  3. Add the herbs.
  4. Cover with vegetable stock and simmer, with the lid on, for about 1 hour.
  5. Stir occasionally, and add more liquid if necessary.
  6. If you're using fresh tomatoes, sit them on top of the veggies for a minute or two, until their skins peel away easily.
  7. Then stir the skinned tomatoes into the soup.
  8. If using canned, add to the soup and stir well.
  9. Season with salt and pepper and serve.
