medium carrots, sliced

cabbage, shredded

medium potatoes, diced
1 tsp
fresh thyme
1 tsp
fresh rosemary
2 Tbsp
fresh parsley
2.5 c
vegetable stock
16 oz
tomatoes
salt and pepper to taste

How to Make Linda's Vegetable Soup

Step-by-Step

  • 1Heat the oil in a large saucepan and saute the onion, leeks, celery, and garlic for 5 minutes.
  • 2Add the carrots, cabbage and potatoes and stir well.
  • 3Add the herbs.
  • 4Cover with vegetable stock and simmer, with the lid on, for about 1 hour.
  • 5Stir occasionally, and add more liquid if necessary.
  • 6If you're using fresh tomatoes, sit them on top of the veggies for a minute or two, until their skins peel away easily.
  • 7Then stir the skinned tomatoes into the soup.
  • 8If using canned, add to the soup and stir well.
  • 9Season with salt and pepper and serve.
