Ingredients

  • 2 tablespoons oil
  • 1 large onion, chopped
  • 2 - leeks, sliced
  • 3 - stalks celery, chopped
  • 1 - garlic clove, crushed
  • 4 - medium carrots, sliced
  • 1 cup cabbage, shredded
  • 2 - medium potatoes, diced
  • 1 teaspoon fresh thyme
  • 1 teaspoon fresh rosemary
  • 2 tablespoons fresh parsley
  • 2.5 cups vegetable stock
  • 16 ounces tomatoes
  • - salt and pepper to taste

How To Make linda's vegetable soup

  • Step 1
    Heat the oil in a large saucepan and saute the onion, leeks, celery, and garlic for 5 minutes.
  • Step 2
    Add the carrots, cabbage and potatoes and stir well.
  • Step 3
    Add the herbs.
  • Step 4
    Cover with vegetable stock and simmer, with the lid on, for about 1 hour.
  • Step 5
    Stir occasionally, and add more liquid if necessary.
  • Step 6
    If you\'re using fresh tomatoes, sit them on top of the veggies for a minute or two, until their skins peel away easily.
  • Step 7
    Then stir the skinned tomatoes into the soup.
  • Step 8
    If using canned, add to the soup and stir well.
  • Step 9
    Season with salt and pepper and serve.
