Ingredients
- 6.5 quarts water
- 2 cups white wine
- 6 stalks celery, chopped
- 6 carrots, scrubbed and coarsely chopped
- 2 large potatoes, scrubbed and coarsely chopped
- 3 zucchinis, sliced
- 2 large onions, chopped
- 1 leek, white part only, thickly sliced
- 5-6 garlic cloves, crushed
- 1/2 pound mushrooms, whole
- 10 peppercorns
- 1 large sprig parsley
- 1 large sprig of thyme
- 2 bay leaves
How To Make light vegetable broth

Step 1Place all of the ingredients in a large soup pot.

Step 2Bring to a boil, reduce the heat, cover, and simmer over low heat for 3 to 4 hours.

Step 3Strain the broth and discard the vegetables.

Step 4Freeze in 1-2-cup containers for use in recipes calling for vegetable stock or broth.
