Ingredients

  • 6.5 quarts water
  • 2 cups white wine
  • 6 stalks celery, chopped
  • 6 carrots, scrubbed and coarsely chopped
  • 2 large potatoes, scrubbed and coarsely chopped
  • 3 zucchinis, sliced
  • 2 large onions, chopped
  • 1 leek, white part only, thickly sliced
  • 5-6 garlic cloves, crushed
  • 1/2 pound mushrooms, whole
  • 10 peppercorns
  • 1 large sprig parsley
  • 1 large sprig of thyme
  • 2 bay leaves

How To Make light vegetable broth

  • Step 1
    Place all of the ingredients in a large soup pot.
  • Step 2
    Bring to a boil, reduce the heat, cover, and simmer over low heat for 3 to 4 hours.
  • Step 3
    Strain the broth and discard the vegetables.
  • Step 4
    Freeze in 1-2-cup containers for use in recipes calling for vegetable stock or broth.
