My sons and I were hungry for Potato Soup, one afternoon, so I invented this recipe. Hope you all enjoy it!

Ingredients
- 6-8 medium peeled,cubed potatoes
- 4 tablespoons butter
- 1 tablespoon olive oil
- 1 teaspoon chicken bouillon granules
- 1/4 teaspoon celery powder
- 2 teaspoons chives, chopped
- 1/2 teaspoon onion powder
- 1/2 cup onion chopped
- 1 package bacon bits or
- 1 cup cooked cubed ham
- 1 cup water
- 1 cup milk
- 2 cups heavy cream
- - salt and pepper to taste
- 1 cup colby jack, or mild cheddar cheese
How To Make leslie's easy potato soup

Step 1Melt butter in fry pan or heavy 3 quart sauce pan. Add olive oil, potatoes,celery and onions. Saute until onions are transparent and celery is almost tender.

Step 2Add the water,bullion, celery powder, onion powder, bacon bits,and chives. Cover and cook over medium heat, stirring often, until potatoes are tender.

Step 3Stir in heavy cream and milk. Simmer over low heat until soup is hot. Stir in 1 cup shredded Colby Jack cheese, salt and pepper to taste.

Step 4Thicken, if needed with flour or cornstarch.

Step 5If you're short on funds, milk can be used in place of heavy cream. Just thicken.
