    onion, chopped
  • 1 c
    carrots, shredded
  • 1/2 c
    sweet potato, peeled and diced
  • 1/2 c
    red bell pepper, diced
  • 4
    garlic cloves, chopped
  • 2 c
    lentils, dry
  • 6 c
    vegetable broth, very hot
  • 1/4 tsp
  • 1 tsp
    curry powder
  • 1/4 tsp
  • pinch
  • pinch

How to Make Lentil Vegetable Stew


  1. In skillet over medium-high heat, bring sherry to simmering; add onion and saute 2 minutes.
  2. Add carrots, sweet potato, bell pepper and garlic; saute 1 minute or until sherry has evaporated.
  3. Spoon into slow cooker.
  4. Add remaining ingredients except salt and pepper; cover and cook on low 8-10 hours, until lentils are very soft and stew is thick.
  5. Salt and pepper to taste.
  6. Serve with a fragrant rice, such as basmati or jasmine.
