    potatoes, peeled
  • ·
    potato cooking water, drained from cooking the potatoes
  • 2
    onions, chopped
  • 1 lb
    chourico, sliced (portuguese sausage)
  • ·
    salt and pepper, to taste

How to Make Kale Soup


  1. Wash kale well and cut up into very small pieces.
  2. Parboil potatoes in enough water to cover. Cube.
  3. Add kale, onions, and chourico. Let simmer for an hour or longer, adding more water as necessary.
  4. Season with salt and pepper.
