Ingredients

  • 1 pound kale
  • 5 - potatoes, peeled
  • - potato cooking water, drained from cooking the potatoes
  • 2 - onions, chopped
  • 1 pound chourico, sliced (portuguese sausage)
  • - salt and pepper, to taste

How To Make kale soup

  • Step 1
    Wash kale well and cut up into very small pieces.
  • Step 2
    Parboil potatoes in enough water to cover. Cube.
  • Step 3
    Add kale, onions, and chourico. Let simmer for an hour or longer, adding more water as necessary.
  • Step 4
    Season with salt and pepper.
