Ingredients

1 lb
kale
5
potatoes, peeled
potato cooking water, drained from cooking the potatoes
2
onions, chopped
1 lb
chourico, sliced (portuguese sausage)
salt and pepper, to taste

Step-By-Step

1Wash kale well and cut up into very small pieces.
2Parboil potatoes in enough water to cover. Cube.
3Add kale, onions, and chourico. Let simmer for an hour or longer, adding more water as necessary.
4Season with salt and pepper.
