I tried this recipoe when we lived in Ohio, and not one for chopping everything small like the original,I heard this recipe from a chef on the Pittsburgh channel.Nice soup for a cold winter night

1/2 lb
ground beef or gound turkey
seasoned bread crumbs
1 Tbsp
whole chicken cut up
4 c
water or chicken broth
small box orzo
2 c
spinach cut up
bag baby carrots
1/4 c
grated romano cheese
salt and pepper to taste
can use frozen meatballs

How to Make Italian Wedding Soup


  • 1combine the ground beef or turkey,bread crumbs,egg salt and pepper in a bowl. mix well and form into small meatballs
  • 2meanwhile add chicken to water or broth, cover and boil for 5 minutes.add the meat balls and carrots to broth bring to a simmer cook for 1 hour. take out chciken and peel from bone.
  • 3add orzo cook for 5 minutes add spinach ,put peeled chciken back in, stir in cheese and serve immediately
