Ingredients

  • 1 pound italian sausage
  • 1 cup chopped onion
  • 1 cup water
  • 1 cup thin sliced carrots
  • 1/2 teaspoon oregano
  • 1 1/2 cups sliced zucchini
  • 3 tablespoons parsley(dry or fresh)
  • 3 cloves of slivered garlic
  • 5 cups beef broth
  • 2 cups peeled, chopped tomatoes or 1 can of italian tomatoes
  • 1/2 teaspoon basil leaves
  • 2- 8 ounces cans of tomato sauce
  • 8 ounces frozen tortillinis
  • 2 - green peppers cut into 1/2 in. pieces

How To Make italian sausage pizza soup

  • Step 1
    Remove casing from Sausage, brown in a 5 qt. Dutch oven. remove sausage and drain. Reserve 1 Tablespoon of the grease in dutch oven. Saute onion and garlic in drippings until tender. Add other ingredients except tortillinis, zucchini,parsley and green pepper. Bring to a boil, reduce heat and simmer uncovered for 30 minutes. Skim fat from soup, stir in zucchini, tortillini, parsley and green pepper. simmer covered an additional 35-40 minutes or until tortillini are tender. Sprinkle parmesan on each serving.
