Italian sausage and potato soup (Zuppa Tuscana)

This hearty soup will warm you up fast. Serve with a side salad and a loaf of crusty bread and you've got a meal!

  •   1 lb
    spicy italian sausage, cooked and crumbled.

    medium size onion - chopped
  •   2 cloves
    garlic - minced
  •   3
    large russet potatoes - scrubbed
  •   2 qt
    chicken broth
  •   1/2 lb
    bacon, cooked and crumbled
  •   3 c
    chopped kale or swiss chard
  •   1 pt
    heavy cream
    grated parmesan cheese

How To Make

    Brown and crumble sausage and drain well. In a large stock pot, bring chicken stock to a boil. Cut potatoes (with skin on) in half length wise then slice. Add potatoes to stock with onion and garlic. Cook until potatoes are done. Add sausage and crumbled bacon and simmer for 10 minutes. Add kale and cook for 5 minutes. Add cream and simmer for another 5 minutes. Garnish with grated parmesan cheese.
