Ingredients

  • 5 quarts water
  • 2 large onions, peeled and quartered
  • 4 - garlic cloves, peeled
  • 4 - celery stalks, sliced
  • 2 large potatoes, scrubbed and coarsely chopped
  • 2 - leeks, white part only
  • - parsley sprigs
  • 2 - bay leaves
  • 10 - peppercorns
  • 4 tablespoons soy sauce
  • 4 large carrots, thickly sliced

How To Make hearty vegetable broth

  • Step 1
    Place all of the ingredients in a large soup pot; bring to a boil, reduce the heat, cover, and simmer over low heat for 3 to 4 hours.
  • Step 2
    Strain the broth and discard the vegetables.
  • Step 3
    Freeze in 1- to 2-cup containers for use in recipes calling for vegetable stock or broth.
