hearty smoked sausage soup

I received this recipe from a friend and we find it delicious. It not only is a hearty and filling soup on a cold day, but it is a healthy one, too.

Ingredients

  • 2 - 3 - "links" smoked turkey sausage (i use one 14 oz. pkg. butterball turkey smoked sausage, 60% less fat)
  • 1/2 - medium head cabbage, coarsley chopped
  • 1 - medium onion, coarsely chopped
  • 1/2 - 1 - red or green bell pepper, coarsely chopped
  • 1 - 15 oz. can black beans, drained and rinsed
  • 1 - 14.5 oz can diced tomatoes with basil, garlic and oregano
  • 1 - can kidney beans (if desired)
  • 1 teaspoon minced garlic
  • - seasonings of your choice: salt, black pepper, mrs. dash, perfect pinch garlic and herb, oregano (i put all of it - the mrs. dash and perfect pinch are both salt free)
  • 2 - 3 cups water

How To Make hearty smoked sausage soup

  • Step 1
    Slice smoked sausage into thin slices and add to a stockpot or large saucepan. Chop cabbage, onions and bell pepper and add to the sausage. Add remainer of ingredients. Cook on medium heat until vegetables are tender, about 30 - 40 minutes. You may have to add a bit more water (or a can of low fat chicken broth, if you prefer) if the liquid in the pot cooks down and it's not soupy enough for you.
