Ingredients
- - 2 granny smith apples, peeled and cut into quarters
- - 2 tsp. minced garlic
- - 1 red bell pepper, cut into quarters, seeded
- - 1 small onion, cut into quarters
- - 4 cups each water and chicken broth
- - 1 can pumpkin, 16 oz
- - 1 cup white wine
- - salt and pepper to taste
How To Make hearty pumpkin soup

Step 1Puree apples, garlic, bell pepper and onion in food processor. Mix with water, broth and pumpkin in a large stockpot and mix well. Bring to a boil over medium high heat, stirring frequently. Add wine, salt and pepper and simmer for 15 minutes, stirring occasionally and skimming the surface as needed. Garnish servings with a dollop of sour cream. Serves 8 to 10
