I was left over baked ham. It's quick and easy and my family loves it.

Ingredients

  • 2 cups ham pieces cut up into bite sizes
  • 8 to 10 medium potatoes medium, cut up 1/4 size
  • 1 large onion ,cut up
  • 1 medium bell pepper,cut up
  • 1/2 cup celery, cut up
  • 1 1/2 cups baby carrots
  • 2 tablespoons red wine vinegar
  • - salt and pepper to taste
  • 4 cups water

How To Make hearty potato soup

  • Step 1
    In a dutch oven or large pot, combine ham peices, onion, bell pepper, celery, and salt and pepper. Add 4 cups of water. Bring to a boil.
  • Step 2
    Add potatoes, carrots and red wine vinegar. Cook on medium heat for 15 minutes or until potatoes and carrots are fork tender.
  • Step 3
    Serve with crackers or cheese toast.
