Ingredients

  • 1 tablespoon vegetable oil
  • 2 tablespoons water
  • 1 - onion, finely chopped
  • 4 large potatoes, peeled and cubed
  • 1/3 cup parmesan cheese
  • 1/2 cup chopped parsley
  • 1/8 teaspoon white pepper
  • 10 ounces frozen chopped spinach
  • - salt and pepper
  • 1/4 cup warm milk
  • 2 tablespoons red wime vinegar

How To Make hearty potato soup verde, grandma w

  • Step 1
    In deep saucepan, place oil, water and onion and saute until translucent. Add cubed potatoes, cheese, parsley, pepper and frozen spinach with just enough water to cover all ingredients. If it is thick, add more water. Cook, covered, over low heat, stirring occasionally. When potatoes are tender, pour mixture into a blender, half at a time, and blend smooth. Salt to taste, stir in vinegar and warm milk and serve.
