Ingredients
- 2 cups country ham
- 1 cup celery, chopped
- 2 cups carrots, diced
- 1/2 cup onion, diced
- 4 cloves garlic, finely chopped
- 5 medium potatoes, cut into large bite size pcs.
- 4 cups chicken stock, homemade or low-sodium
- 1 teaspoon thyme
- 1 teaspoon black pepper
- 1/4 cup masa for thickening
- 6 slices american cheese, opt
How To Make ham & potato soup

Step 1Place onion, celery, carrots, garlic and ham in large soup pot with about 1 tbls of olive oil. Simmer till veggies are tender. If using leftover ham, add once veggies are tender.

Step 2Add chicken stock to pot and spices bring to a boil, reduce heat and add potatoes. Cook on a low boil for about 20-30 min till potatoes are tender.

Step 3Once potatoes are tender reduce heat to warm. Add cheese if desired. Mix 1/4 c. of masa to 1 c. of hot liquid from soup and mix well to remove lumps. REturn back to soup and mix in to thicken broth.
