Ingredients
- 2 tablespoons butter or margarine
- 8 ounces green beans, trimmed
- 1 clove garlic, crushed
- 2 cups vegetable stock
- 1/2 cup grated parmesan cheese
- 1/4 cup light cream
- - salt and freshly ground pepper
- 2 tablespoons chopped fresh parsley, to garnish
How To Make green bean and parmesan soup

Step 1Melt the butter or margarine in a medium saucepan. Add the green beans and garlic and cook for 2 to 3 minutes over medium heat, stirring frequently.

Step 2Stir in the stock and season with salt and pepper. Bring to a boil. Lower the heat and simmer, uncovered, for 10 to 15 minutes until the beans are tender.

Step 3Pour the soup into a blender or food processor and process until smooth. Alternately, puree the soup in a food mill. Return to the pan and reheat slowly.

Step 4Stir in the parmesan cheese and cream and sprinkle with parsley. Serve hot.
