Ingredients

  • 2 tablespoons butter or margarine
  • 8 ounces green beans, trimmed
  • 1 clove garlic, crushed
  • 2 cups vegetable stock
  • 1/2 cup grated parmesan cheese
  • 1/4 cup light cream
  • - salt and freshly ground pepper
  • 2 tablespoons chopped fresh parsley, to garnish

How To Make green bean and parmesan soup

  • Step 1
    Melt the butter or margarine in a medium saucepan. Add the green beans and garlic and cook for 2 to 3 minutes over medium heat, stirring frequently.
  • Step 2
    Stir in the stock and season with salt and pepper. Bring to a boil. Lower the heat and simmer, uncovered, for 10 to 15 minutes until the beans are tender.
  • Step 3
    Pour the soup into a blender or food processor and process until smooth. Alternately, puree the soup in a food mill. Return to the pan and reheat slowly.
  • Step 4
    Stir in the parmesan cheese and cream and sprinkle with parsley. Serve hot.
