mushrooms, sliced
1 1/2 c
onions, chopped
1 c
carrots, diced
2 tsp
dried thyme
1 clove
garlic, minced
1/4 tsp
crushed red pepper
2 tsp
7 c
beef broth
30 oz
great northern beans, rinsed and drained
3-4 c
kale, sliced
1/2 c
quick cooking barley
1 Tbsp
lemon juice
salt and pepper, to taste

How to Make Great Northern Bean & Kale Soup


  • 1Sauté mushrooms, onions, carrots, thyme, garlic and red pepper in oil until onions are tender, 10 minutes. Stir in remaining ingredients except lemon, salt and pepper. Bring to a boil; reduce to simmer, cover until barley is tender, about 15 minutes. Stir in lemon juice and season with salt and pepper.
