Great Northern Bean & Kale Soup

mushrooms, sliced
1 1/2 c
onions, chopped
1 c
carrots, diced
2 tsp
dried thyme
1 clove
garlic, minced
1/4 tsp
crushed red pepper
2 tsp
7 c
beef broth
30 oz
great northern beans, rinsed and drained
3-4 c
kale, sliced
1/2 c
quick cooking barley
1 Tbsp
lemon juice
salt and pepper, to taste


1Sauté mushrooms, onions, carrots, thyme, garlic and red pepper in oil until onions are tender, 10 minutes. Stir in remaining ingredients except lemon, salt and pepper. Bring to a boil; reduce to simmer, cover until barley is tender, about 15 minutes. Stir in lemon juice and season with salt and pepper.
