How to Make Great Northern Bean & Kale Soup
- Sauté mushrooms, onions, carrots, thyme, garlic and red pepper in oil until onions are tender, 10 minutes. Stir in remaining ingredients except lemon, salt and pepper. Bring to a boil; reduce to simmer, cover until barley is tender, about 15 minutes. Stir in lemon juice and season with salt and pepper.
