Ingredients
- 8 ounces mushrooms, sliced
- 1 1/2 cups onions, chopped
- 1 cup carrots, diced
- 2 teaspoons dried thyme
- 1 clove garlic, minced
- 1/4 teaspoon crushed red pepper
- 2 teaspoons oil
- 7 cups beef broth
- 30 ounces great northern beans, rinsed and drained
- 3-4 cups kale, sliced
- 1/2 cup quick cooking barley
- 1 tablespoon lemon juice
- - salt and pepper, to taste
How To Make great northern bean & kale soup

Step 1Sauté mushrooms, onions, carrots, thyme, garlic and red pepper in oil until onions are tender, 10 minutes. Stir in remaining ingredients except lemon, salt and pepper. Bring to a boil; reduce to simmer, cover until barley is tender, about 15 minutes. Stir in lemon juice and season with salt and pepper.
