I like squash soup and have made several different kinds and this is another yummy soup.

Ingredients
- 3 cups coarse chopped onions
- 2 tablespoons canola or vegetable oil
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cinnamon
- 2 - bay leaves, dried
- 1 cup water
- 2 - celery ribs, chopped
- 2 medium carrots chopped
- 2 cups cooked and mashed squash
- 1 cup tomato juice
- 1 cup apple juice
- 1 cup orange juice
- - salt and pepper to taste
How To Make golden squash soup

Step 1n large pot saute onions in oil with nutmeg. cinnamon., until onion is tender, stir in water carrot and celery, cover and simmer til vegies are tender about 15 minutes.

Step 2In blender puree in batches. this makes about 2 quarts and freezes well Serve with a thin slice of lemon floating on top and a little chopped chives. .
