I like squash soup and have made several different kinds and this is another yummy soup.

Ingredients For golden squash soup

  • 3 c
    coarse chopped onions
  • 2 Tbsp
    canola or vegetable oil
  • 1/4 tsp
    ground nutmeg
  • 1/4 tsp
    ground cinnamon
  • 2
    bay leaves, dried
  • 1 c
    water
  • 2
    celery ribs, chopped
  • 2 md
    carrots chopped
  • 2 c
    cooked and mashed squash
  • 1 c
    tomato juice
  • 1 c
    apple juice
  • 1 c
    orange juice
  • salt and pepper to taste

How To Make golden squash soup

  • 1
    n large pot saute onions in oil with nutmeg. cinnamon., until onion is tender, stir in water carrot and celery, cover and simmer til vegies are tender about 15 minutes.

    In blender puree in batches. this makes about 2 quarts and freezes well Serve with a thin slice of lemon floating on top and a little chopped chives. .
