Ingredients
- 1 tablespoon olive oil
- 1 shallot chopped
- 4 green onions chopped white and green parts separated
- 4 cloves garlic minced
- 2 tablespoons fresh ginger grated
- 6 cups chicken stock
- 2 whole star anise
- 1 tablespoon soy sauce
- 1 tablespoon fish sauce
- 8 ounces crimini mushrooms sliced
- 6 ounces rice noodles
- 2 baby bok choy chopped white and green parts separated
How To Make ginger garlic soup w noodles, bok choy & mushrooms

Step 1Heat the oil in a stock pot and add the shallots and cook 3 minutes. Add the white parts of the green onions, ginger and garlic. Cook 2 more minutes.

Step 2Add the chicken stock, star anise, soy sauce and fish sauce. Bring to a simmer and simmer 10 minutes.

Step 3Remove the star anise and discard. Add the dry noodles, mushrooms and white parts of the bok choy. Cook about 8 minutes.

Step 4Add the dark green leaves of the bok choy and cook 2 minutes.

Step 5Ladle into bowls and garnish with green parts of scallion
