gaspaxo-chilled soup for summertime

A friend of mine from Spain gave me this recipe.We love having it especially in the warmer months!

Ingredients

  • 1 pound tomato
  • 2 - green bell peppers,seeded, diced
  • 1 - cucumber, peeled, diced
  • 1 - loaf french bread (scoop out the inside)
  • 1 cup olive oil
  • 2 tablespoons vinegar
  • 6 cloves garlic, crushed
  • - salt

How To Make gaspaxo-chilled soup for summertime

  • Step 1
    moisten the bread with water and vinegar
  • Step 2
    once well soaked, add the crushed garlic and salt- slowly pour the oil until you get a smooth, wet dough.
  • Step 3
    add the bell peppers, tomatoes and the cucumber
  • Step 4
    throw in a little water and place in blender- mix until well blended- Then you pass it through the gaspaxo (wire meshed colander)
  • Step 5
    keep adding water until it gets as condensed as you like
  • Step 6
    serve cold and accompanied with little pieces of onion, cucumber, tomato, bell peppers and bread
