Ingredients

  • 2/3 c
    sliced carrot
  • 1/2 c
    onion diced
  • 3 c
    beef, chicken or vegetable broth
  • 1 1/2 c
    diced green cabbage
  • 1/2 c
    green beans
  • 1 Tbsp
    tomato paste
  • 1/2 tsp
    dried basil
  • 1/4 tsp
    dried oregano
  • 1/4 tsp
    salt
  • 1/2 c
    diced zucchini

How to Make GARDEN VEGETABLE SOUP

Step-by-Step

  1. In large saucepan sprayed with Pam saute carrot, onion and garlic over low heat till softened. Add broth, cabbage, beans, tomato paste, basil, oregano and salt. Bring to a boil.
  2. Lower heat and simmer covered about 15 minutes or until beans are tender. Stir in zucchini and heat 3-4 minutes
  3. I use low sodium broth.
