1 Tbspolive oil, extra virgin

2/3 ccarrots, sliced or chopped

1/2 cdiced onion

2 clovegarlic, minced

3 cbroth (beef, chicken or vegetable)

1 1/2 to 2 ccabbage, chopped

1/2 cgreen beans
-
1 Tbsptomato paste
-
1/2 tspdried basil
-
1/4 tspdried oregano
-
1/2 czucchini, chopped
-
·salt & pepper to taste
How to Make Garden Vegetable Soup
- Pour a small amount of olive oil (1 Tbsp.) into a large soup pan; sauté onions, carrots and garlic over low heat or until softened, about 5 minutes.
- Add broth, tomato paste, cabbage, green beans, tomato paste, basil, oregano, salt and pepper. Bring to a boil.
- Reduce heat; let simmer for about 15 minutes or until all vegetables are tender; add zucchini and simmer for another 5 minutes for so.
