This is one of our favorite tomato soups and we have crunchy grilled cheese sandwiches along with it.

Ingredients

  • 1 tablespoon canola oil (can use vegetable oil also)
  • 3/4 cup minced onion
  • 2 cloves garlic, minced
  • 1 tablespoon chopped fresh basil
  • 1 teaspoon minced thyme
  • 5 cups diced tomatoes ( roma's are my preference)
  • 1 1/2 cups vegetable or chicken broth
  • 2 teaspoons sugar
  • - salt & pepper to taste
  • 2 1/2 tablespoons tomato paste

How To Make fresh tomato soup

  • Step 1
    In a large saucepan, heat the oil over medium heat. Add the onion, garlic, basil, and thyme. Cook, stirring frequently until the onions soften, about 5 minutes.
  • Step 2
    Add the tomatoes and cook, for 5 minutes. Stir in the broth, tomato paste, and sugar. Season to taste with salt & pepper.
  • Step 3
    Bring to a boil. Reduce the heat and simmer, uncovered for 15 minutes. Blend the soup in a blender until smooth. Ladle into bowls and garnish with additional basil.
