This is one of our favorite tomato soups and we have crunchy grilled cheese sandwiches along with it.

Stove Top


  • 1 Tbsp
    canola oil (can use vegetable oil also)
  • 3/4 c
    minced onion
  • 2 clove
    garlic, minced
  • 1 Tbsp
    chopped fresh basil
  • 1 tsp
    minced thyme
  • 5 c
    diced tomatoes ( roma's are my preference)
  • 1 1/2 c
    vegetable or chicken broth
  • 2 tsp
  • ·
    salt & pepper to taste
  • 2 1/2 Tbsp
    tomato paste

How to Make Fresh Tomato Soup


  1. In a large saucepan, heat the oil over medium heat. Add the onion, garlic, basil, and thyme. Cook, stirring frequently until the onions soften, about 5 minutes.
  2. Add the tomatoes and cook, for 5 minutes. Stir in the broth, tomato paste, and sugar. Season to taste with salt & pepper.
  3. Bring to a boil. Reduce the heat and simmer, uncovered for 15 minutes. Blend the soup in a blender until smooth. Ladle into bowls and garnish with additional basil.
