This is one of our favorite tomato soups and we have crunchy grilled cheese sandwiches along with it.

1 Tbsp
canola oil (can use vegetable oil also)
3/4 c
minced onion
2 clove
garlic, minced
1 Tbsp
chopped fresh basil
1 tsp
minced thyme
5 c
diced tomatoes ( roma's are my preference)
1 1/2 c
vegetable or chicken broth
2 tsp
salt & pepper to taste
2 1/2 Tbsp
tomato paste

How to Make Fresh Tomato Soup


  • 1In a large saucepan, heat the oil over medium heat. Add the onion, garlic, basil, and thyme. Cook, stirring frequently until the onions soften, about 5 minutes.
  • 2Add the tomatoes and cook, for 5 minutes. Stir in the broth, tomato paste, and sugar. Season to taste with salt & pepper.
  • 3Bring to a boil. Reduce the heat and simmer, uncovered for 15 minutes. Blend the soup in a blender until smooth. Ladle into bowls and garnish with additional basil.
